  • This course aims at providing training for catering staff on the requirements of the “Food Hygiene Systems FHS 001:2013.

1) Introduction to FHS 001:2013 and Responsibilities of Top   Management

  • Briefing on the background and aim of the standard.
  • Explain on the role and expectation of the Top Management in the FHS

2) General Hygiene requirements

  • Explain in details regarding the hygiene requirements in Catering industry

3) Food process hygiene requirements

  • Categorization hot products, cold products, raw products
  • What is a process? Flow diagrams for food processes
  • Monitoring of CCP. 4.4 Corrective action 4.5 temp control and control exposure
  • Purchasing material (inspection and records)
  • labeling of food ingredients
  • List of food additives

4) Check and review

  • How to carry out internal audit and inspection, corrective actions

5) Documentation and record keeping

  • Explain documentation and record requirements

6) Workshop

How to implement Food Hygiene Systems in Catering industry (Case study, interactive workshop. Participants will be using the sample record sheet in the workshop)
